Soup Salad for Lunch Todays Moxie

This recipe for soup and salad is so easy! Only 15 minutes from the fridge to your belly. 

Ready To Use Foods:

This recipe uses up all of the things you should keep on hand in your kitchen at all times.

Quinoa: Make your quinoa ahead a time in large amount that you can eat in a week and keep in your refrigerator. 

Beans: always keep beans on hand. Whether they are canned or prepare the dried ones and keep them in the freezer.

Chicken: Buy your chicken breast from the store then portion it out in single portions and keep in your freezer. Take out a breast the night before you need it so it has time to defrost.

Ingredients

Soup

  • 3 oz. chicken breast
  • 1/3 cup northern beans
  • 1/2 cup cooked quinoa
  • 1 slice onion
  • 1 slice tomato
  • 4 chicken broth frozen cubes
  • 1-2 tsp tex-mex spice
  • Olive oil spray
  • lime

Salad:

  • Romaine
  • Green goddess dressing
