Steak Fajitas Todays Moxie

Delicious steak fajitas for lunch. Keep tortillas and steak on hand in your freezer so you are ready to put togehter this quick nutritious lunch.

Buy your steak then portion it out in single size portions, wrap each portion in plastic wrap and store in the freezer. Tortillas can be kept in the freezer as well then pull them out when you need them.

Prep Time: A few minutes
Cook Time: 5-10 minutes
Servings: 1


  • 4 oz steak
  • 2 small tortillas
  • handful of shreaded lettuce
  • 1-2 oz onion chopped
  • 3 small peppers
  • 4 tbs salsa
  • McCormick Barbeque Spice
  • Salt
  • 1 tsp coconut oil


  1. Slice steak against the grain into bite sized strips. Season with McCormick Barbecue Spice. Heat skillet on medium with 1 tsp of coconut oil. Start the steak.
  2. While keeping an eye on your steak in the skillet prepare your other ingredients use another cutting board or clean work space. Slice onion, peppers and lettuce.
  3. Remove tortillas from the freezer and place on a plate. Cover with a wet paper towel and microwave for 20 seconds.
  4. When the steak is done remove and place in a bowl to rest. Cook the onions and peppers. Add a little salt to taste.
  5. Place ingredient on your tortillas.
  6. Enjoy.
