Egg Cheese Breakfast Sandwich4 Todays Moxie

On my quest to eat strictly Mediteranean style, I whipped up this egg and cheese breakfast sandwich with yellow pepper, red onion and sautéed spinach then topped it with a slice of Sargento cheddar cheese.

Prep Time: 5 minutes
Cook Time: 5-7 minutes
Servings: 1 Serving

Ingredients

  • 1 slice artisan italian bread
  • 1 egg
  • 1 slice of cheese (1 oz)
  • 1 slice of pepper
  • 1 slice of red onion
  • handful of fresh spinach (1.5 oz)
  • 1 spray olive oil

Directions

  • Heat the pan to medium and spray with olive oil.
  • Toast your bread.
  • Add the onion and pepper sauté until at least traslucent with a little brownness and remove from pan. (2 min)
  • Add spinach and sautee (1 min) until wilted, remove from pan and stack on other vegetable.
  • Quickly rinse out pan and return to heat, crack egg into a small bowl and wisk with a frok, add egg to pan. and swirl it around using a spatula until it is cooked. Be gently with the egg. (1-2 min)
  • Cut your bread in half.
  • Add scrambled egg to the toast, top with a slice of cheese then the vegetables and finally the other half of the toast.
  • Enjoy with a serving of fruit like a 1/2 cup of green grapes and a cup of cofffee.
