Slice your onions, clean and slice the peppers and mushrooms. To clean the mushrooms just wipe them with a clean towel. Don't put them in water. Dice up a tbs of onion and pepper fine to go in your burger.
Clean and chop your spinach then place it in a bowl add the olive oil and squeeze of fresh lime, a little salt to season and stir until the leaves are glistening. Pour onto your serving plate.
Use your food processor to make the burger. Place the lentils, oats and paste in the food processor, season with salt and pepper and process until its combined. Then and the onion and pepper, stir to combine and then form your patty and set it aside.
Make quacamole. I use a masher to mash the clove then I mash the avocado and stir all the ingredients to combine.
Heat skillet to medium heat. Spray liberally with olive oil. Cook lentil burger on both sides for 2-3 minutes each. Burger should brown nicely. When it's done pull it out and set aside.
Add another spray of olive oil to the pan and add the onion and pepper and a sprinkle of salt. The salt will draw out the sweetness of the vegetables. Sauté until onions are translucent then add the mushrooms and continue cooking and stiring every so often until brown.
Plate your salad. Spinach goes down first followed by the onions, peppers and mushroom, then the lentil burger goes ontop, dollup with all the delicious guacamole and garnish with fresh jalapeno.
