This salad was made with left over ingredients from grilling the other night with my family. I added mixed spring greens to leftover grilled chicken and vegetables; zuchinni, yellow squash, and onions, sprinled with balsamic vinegar and olive oil for a healthy Mediterranen style lunch.

Serving Size: 2-3 Cups

Ingredients

  • Handful of organic spring greens
  • 1 cup left over grilled vegetables
  • One grilled chicken tnder
  • 5 mint leaves
  • Balsamic vinegar
  • Olive Oil

Directions

All I had to do was heat up the chicken and vegetables in a skillet with a little olive oil, then topped my salad greens, added the tomatoes, mint leaves and balsamic vinegar and I was ready to eat.
