Red Thai Curry With Jasmine Rice Todays Moxie

Ingredients

Jasmine Rice

  • 1 cup jasmine rice
  • 2 cups water

Red Thai Curry with Chicken

  • 1-2 chicken breasts 
  • 1 carrot 
  • 1/2 onion
  • 1 -2 broccoli crown
  • 1 tsp fresh grated ginger
  • 1 clove garlic
  • 1-2 tsp sesame oil
  • 1 rounded tsp red curry paste
  • 1/2 can coconut milk
  • 1 tsp brown sugar
  • 1 tsp fish oil
  • 1 tsp tamari
  • peanuts and chives for garnish

Directions

  1. Start the rice first. Palce rice and water in a pot on high. Let it come to a boil then reduce the heat to a simmer, cover the pot and set your timer for 15 minutes. Do not stir!
  2. Once the rice is going cut the chicken and vegetables into bite size pieces. Use separate cutting surfaces for the meat and vegetables. 
  3. Mince the clove of garlic.
  4. Heat pan to medium high heat and add oil. Then add your vegetables and stir fry for a few minutes until they begin to get tender.
  5. Add garlic and grate in ginger. Stir until fragerant.
  6. Add all the other ingredients and stir until blended. Taste sause to see what you might need to add.

To Serve: Use a rounded 1/2 cup meausing cup, pack it with rice then carefully flip it over onto your plate so that you have a nice rounded ball. Spoon red curry with vegetables and chicken over the rice and garnish with peanuts and chives. Enjoy!
