Taste of Thai Healthy Carrot Ginger Soup

Thai Carrot Soup Hor Todays Moxie

This carrot soup offers up the flavors of Thailand which may may you think it is complicated. But you will be ejoying it in about 15 minutes.

Servings: 1 Serving

Ingredients

  • 4 oz carrots chopped (3 long carrots)
  • 1 oz onion (1 thick slice chopped)
  • fresh ginger
  • 1/4 tsp Thai chile paste
  • 1 tsp peanut butter
  • 1 quick squeeze of Siracha sauce
  • 2 tbs canned coconut milk
  • 5 oz water
  • Spray of olive oil
  • Salt

Directions

  1. Heat the pot to medium heat.
  2. Spray quickly with olive oil.
  3. Dice your onion and add to the pot. Season with a little salt.
  4. Use a peeler to skin the outer layer of the carrots, snip the top and cut up the carrots into bite size pieces into your soup pot.
  5. When the vegetables are tender add fresh grated ginger using a microplane.
  6. Add peanut butter and siracha sauce. Stir to combine.
  7. Add the water. I use my soup bowl to measure and continue to stir.
  8. Let the soup come to a boil then pour it into your blender and puree.
  9. Pour the soup into your bowl and stir in coconut milk.
