Pesto Pizza with Roma Tomatoes Todays Moxie

I love making pizza at home with fresh ingredients and homemade dough.

Cook Time/Servings

 

 

Ingredients

Dough

  • 1 tsp yeast
  • 1 cup flour
  • 1/2 cup warm water
  • 1/2 tsp salt

Pesto

  • 2 bunches of basil
  • 1 clove garlic
  • palm full of parmesan cheese
  • palm full of pine nuts
  • sprinkle of salt

Toppings

  • 1 roma tomato
  • 1/2 cup shreaded mozzarella
  • sprinkle of dried oregano
  • sprinkle of red pepper flake
  • sprinkle of parmesan cheese

Directions

  1. Start by making the dough place yeast in a bowl with 1/2 cup warm tap water. Let it sit for 10 minutes. Then add salt and half the flour. Start to combine adding more flour as you go. Knead for 6-7 minutes. Roll into a ball and cover with a tsp or so of olive oil. Place back in your cleaned mixing bowl and cover with a clean towel. Let it sit for 1 hour.
  2. Make pesto: Place all of the pesto ingredients into your food processor and process. Drizzle in olive oil until you get to the desired consistency.
  3. Make the pizza: Preheat oven to 450°. After an hour punch down dough and separate into two balls. Knead the one ball and form it into a crust. I placed my pizza on aluminum foil for easy clean up. Top pizza with a tbs of pesto, cheese, tomato and sprinkle with red pepper flake, oregano and parmesan cheese.
  4. Bake for 6-7 minutes keeping an eye on it so it doesn't burm.
  5. Enjoy!
