Skin your chicken wings to rmove as much of the fat as you can. Season with salt, pepper and thyme and place in the oven for 20 minutes once the oven is preheated.
Start the balsamic glaze. Place vinegar in a pan and heat to medium keeping an eye on it so it does not come to a boil. You want a low simmer and allow the balsamic vinegar to reduce to a sweet thick syrup. Remove from heat. (5 min)
Leek Rings. Cut the white part of your leeks into thin rings about 1/8" thick and wash thouroughly to remove and sand. Place the rings on a roasting pan, spray with olive oil and sprinkle with salt. These will go in the oven for 10-15 minutes.
Make the strawberry salad. Wash and dice your strawberries, chiffinod the mint leaves, finely chop one of the leek rings and place it all in a small bowl. Squeeze on the lime, sprinkle with salt, stir and set aside.
When the chicken is done toss it in your balsamic sauce to coat evenly. I let mine site while I finished the rest of the dinner.
Broccoli goes quick. Place in a microwave safe bowl, add a little water and nuke it for 2 minutues. Broccoli is done when it is forsk tender. While it cooks chop one really small garlic clove then run the flat part of your knife along the garlic to turn it into a fine paste. Add the butter and combine. When the garlic is done, top with the butter and let it melt.
Now everything should be done. All you need to do is arrange your plate. I put the strawberry salad down first then placed the wings one on top of the other, followed by the rings and piled them high allowing them to spill over. Sprinkle with blue cheese, add your broccoli and you are ready to eat.
