Recently my friend gave me a box of thin mint cookies, my favorite of all the Girl Scout cookies. While I was scarfing them down I read the ingredients list and thought there has to be a bettewr way to make these.
Prep Time: Make dough 5 minutes, Chill time 30 minutes, 15 Minutes to coat Cook Time: 12 Minutes Servings: 50 Cookies
1 Cup Rye Flour
1/2 Cup Cacao
1 Cup Raisins
1/2 Cup Raw Honey
1/2 tsp Peppermint Extract
1/4 tsp Salt
1/2 tsp Baking Soda
1/2 Cup Filtered Water
1 Bag Semi Sweet Chocolate
1 tbs Coocnut Oil
1/4 - 1/2 tsp Peppermint Extract
Make The Dough
Make the dough first by placing all the ingredients in a food processor and pulsing until you have a sticky dough.
Wrap the dough in plastic wrap and place in the refrigerator to chill for 30 minutes.
Bake The Cookies
Preheat oven to 350
Roll gough to 1/8 inch high. Use plastic wrap above and below the dough to keep it from sticking to the rolling pin.
Cut out dough using circle cutter and place on cookie sheet.
Cook for 12 minutes then cool on cookie racks.
Coat With Chocolate
Once cookies are cool you can coat them.
Place chocolate and oil in microwavable bowl and heat on hugh in microwave for 30 seconds. Stir chips until they are melted. If you need to heat the chocolate more heat in 15-30 minute incremints to keep the chocolate from scorching.
Coat the bottom of the cookies first scrapong off excess chocolate. Chill cookies in the refrigerator until the chocolate sets.
