Cherry Pie with Almond Crust

Cherry Pie Todays Moxie

Compare this single serving cherry pie to one of those hand pies you might pick up at a gas station and see the nutritional difference.

This recipe for cherry pie has less calories, less sugar, 0 trans fats, 5.9 grams of fiber, very little sodium and no cholestrerol. Compare that to your favorite, pre-packaged store bought hand pie.

Ingredients

  • 1 cup frozen cherries
  • 1 tsp cornstarch
  • 1/4 cup water
  • 1/4 cup almond meal
  • 1 tsp maple syrup
  • 1 stevia packet

 

Directions

  1. Put almond meal in your small pie pan add a tbs of water and a sprinkle of the stevia packet. Stir to combine. then form the crust to the bottom of the pan.
  2. Bake at 350º for 10 minutes.
  3. Place cherries in a pot on medium. 
  4. Put corn starch and water in a small bowl and stir to combine.
  5. Add cornstarch mixture to the pot once the berries are hot and stir until it is thick and bubbly.
  6. Add maple syrup and the rest of the stevia.
  7. When crust is done, fill with pie filling.
  8. Enjoy.
