Nutritious Blueberry Pie Almond Crust

Blueberry Pie Healhty Todays Moxie

Sweet and tasty this nutritious recipe for blueberry pie with a dollup of coconut whipped cream is sure to satisfy that sweet tooth without the guilt.

Servings: 1 Serving

Ingredients

  • 1 cup blueberries
  • dash cinnamon
  • dash all spice
  • 1 tsp cornstarch
  • 6 tbs water
  • 1/2 oz almonds
  • 1/2 oz oats
  • 1 date
  • 1 tbs water

 

Directions

  1. Place blueberries, cinnamon and all sprice in a pot on medium. 
  2. Put corn starch and 6 tbs water in a small bowl and stir to combine.
  3. Add cornstarch mixture to the pot once the berries are hot and stir until it is thick and bubbly.
  4. To make the crust place oats, almonds, date and a tbs of water in the food processor and prcess until it forms a ball.
  5. Press crust to outside of a small pie tin or pyrex bowl.
  6. Bake at 350º for 10 minutes.
  7. When crust is done, fill with pie filling.
  8. Enjoy.
