Simple Sunny Poached Egg Over Quinoa

Poached Egg Quinoa Breakfast Todays Moxie

If you make your quinoa ahead of time and keep it in the refrigerator then this simple breakfast will go together in a snap with one poached egg and garnish with green onion and a splash of hot sauce.

Prep Time: 2 Minute
Cook Time: 5 Minutes
Servings: 1 Serving


  • .75 cup cooked quinoa
  • 1 large egg
  • 1 green onion top only



  1. Heat 1/2 cup of water in a pot to a simmer.
  2. Place quinoa on your microwaveable plate and heat in microwave for 1 minute.
  3. Carefully drop egg into simmering water and poach for 2-4 minutes.
  4. Remove egg carefully with a spatula and place over quinoa.
  5. Garnish with greens and hot sauce.
  6. Enjoy.
