Quinoa and a Fried Egg with Salsa

Egg Quinoa Salsa Todays Moxie

Make your quinoa ahead of time and keep it in the refrigerator then this simple breakfast will go together in a snap with one fried egg and garnish with cilantro, spring onion, yellow pepper and salsa.

Servings: 1 Serving


  • 1/2 cup cooked quinoa
  • 1 large egg
  • 1 tsp olive oil
  • 1 spring onion chopped
  • 1 oz yellow pepper diced
  • 1-2 tbs cilantro chopped
  • 1-2 tbs salsa


  1. Add 1 tsp olive oil to a small pan and heat to medium.
  2. Place quinoa in your microwaveable bowl and heat in microwave for 1 minute.
  3. Crack egg into a small bowl and wisk with a fork until fuffy.
  4. Fry egg in the pan to your liking.
  5. Place egg over the quinoa and garnish with spring onion, salsa, pepper and cilantro.
  6. Enjoy.
