Buttermilk Bread Pudding

Buttermilk Bread Pudding Todays Moxie

Homemade bread can go stale real quick. Don't waste it! This bread pudding is made from leftover Irish soda bread from St. Patrick's Day Dinner. It was also a great way to use up the buttermilk that was purchased to make the bread earlier in the week.

Maybe it's just me, but I think this recipe would be equally delicious served as a dessert or for breakfast.

Cook Time/Servings

Prep Time: 5-10 minutes
Cook Time: 30 minutes
Servings: 6-12


  • 6 slices of left over stale bread
  • 2 cups buttermilk
  • 2 eggs
  • 1/2 cup brown sugar
  • 2 tbs butter melted
  • 1 tsp vanilla
  • 1 tsp cinnamon


  1. Preheat oven to 425°
  2. Cut or tear the bread into bite size pieces and layer a caserole dish.
  3. Melt butter and pour over the bread
  4. Make the custard by wisking together the buttermilk, eggs, brown sugar, vanilla, and cinnamon then pour it over the bread. Push the bread down if you need to so it at least gets wet. Most of the bread should be submerged with only a few pieces sticking out to brown and get crisp.
  5. Place the bread pudding int the middle of the oven to bake for about 30 minutes until the pudding is bubbly and the top is brown.
  6. Let it cool and enjoy with ice cream or a cup of coffee.
