Blueberry Quinoa Almonds Breakfast Todays Moxie

This scrumptious breakfast will get your day started right. Quinoa is a complete protein offering all essential amino acids, a healthy fat and vitamin E from the almonds, anti-inflammatory cinnamon and half a cup of blueberries to help keep you regular. Blueberry Almond Quinoa for Breakfast.

This recipe has a little Indian flair with the use of green cardamom pods. It's the cardamom flavor that made me enjoy this so much and not crave the sweetness of sugar.

You may want to add a tsp of sweetner like maple syrup, honey or agave syrup to make this sweet like blueberry pie. Personally I like it just the way it is.

Cook Time: 3 Minutes
Servings: 1 Serving

Ingredients

  • 1/2 cup cooked quinoa
  • 1/2 cup blueberries
  • 1/2 cup almond milk
  • dash cinnamon
  • dash all spice
  • 3 cardamom pods

 

Directions

  1. Fill your bowl with 1/2 cup of cooked quinoa, 1/2 cup of almond milk and 3 cardamom pods and microwave for 2 minutes.
  2. Add frozen blueberries to another bowl. Sprinkle with cinnamon and all spice. Just a little. Nuke for one minute.
  3. Remove the seeds from the cardomom pods into the bowl of quinoa and discard the pods.
  4. Top quinoa with blueberries.
  5. Enjoy
